Raw Food Recipes: Caesar Salad and Corn Chowder (Dinner for Two)

Hi yogis! Today I’d love to share two healthy raw-food recipes with you. These are from Deckopedia’s The Raw Food Beginner’s Deck. I love the deck of cards because it’s like a little on-the-go cookbook—each card has a recipe with food prep tips and tricks from a knowledgeable raw food chef.

These two recipes would make a lovely raw food dinner for two. Enjoy!

CAESAR SALAD

Salad
1 head of Romaine
1 cup Cherry tomatoes, halved
1 tbsp. raw dulse or kelp flakes (optional)
Sea salt and pepper to taste

Dressing
1/2 cup cashews, soaked for 2+ hours
1/4 cup hemp
1/4 cup nutritional yeast
Juice of 2 lemons, freshly squeezed
1 garlic clove, crushed
1/2 tsp. sea or pink Himalayan salt
2/3 cup spring water

Raw Parmesan
1/2 cup macadamia or cashew nuts, not soaked
1 tsp. nutritional yeast
1 pinch of hing (optional)
1 pinch garlic powder (optional)
Grate or process nuts in a food processor. Then, add remaining ingredients and process.

1. Wash and drain salad, then add remaining salad ingredients.
2. Rinse and drain the cashews.
3. Combine dressing ingredients and blend until smooth.
4. Toss the salad with the dressing and sprinkle with raw Parmesan.

CORN CHOWDER

2 cups fresh corn kernels
1 cup spring water
1/2 tsp. Himalayan pink salt
1/2 avocado
1/2 tsp. garlic powder
Juice of 1/2 a lime, freshly squeezed
Pinch of cayenne pepper
1. Blend all ingredients.
2. For chunky consistency, blend less. For smoother consistency, blend
longer and add water if needed.
Toppings for a spicy chowder: red bell pepper, tomatoes, jalapenos, and
chopped cilantro.
Tip for the winter: Add a little more cayenne pepper to warm you up!
Shelf life: 1 day in the fridge
